With a humble façade, the true identity of Mr Hubbard is concealed from the initial glance. However, inside the refrigerated cabinet sit delicious raw treats and fresh lovingly constructed salads. Mr Hubbards owner Adam produces an ever-changing seasonal lunch menu. Serving both brekky and lunch, the real heart and soul of Mr Hubbard are the “to go meals” from his refrigerated cabinet. Adam has created a way to provide busy people with the option of nutrient dense meals that promote clean eating, without paying a fortune or requiring a long wait! We sat down with Adam to gain more insight.

I was in real estate for nine years prior. The reason why I opened Mr Hubbard is because while working in real estate I was very healthy and I liked having variety in my diet. However, I found I didn’t have the time to sit in a café and order breakfast or lunch. I also found most cafes would have the same menu for up to six months at a time which I also hated. So, I left real estate. I decided that the only way I can get what I wanted was by doing it myself.
What was your vision for Hr Hubbard?
So originally I just wanted a fresh, clean eating, healthy grab and go café. So I’ve made it as uncomfortable as possible inside. Comfortably uncomfortable.
However I’ve had to adapt what I wanted to do based on customers. People like to sit in. If people are ordering off our breaky menu, they will have to wait a normal 10 – 15 minutes. If they’re ordering lunch they’ll have it within a minute. Grab and go was what my core business was because that’s what I needed when I didn’t have time for lunch when I worked an office job prior. So I’ve stayed true to it, but I have to adjust other bits and pieces based on the market place.
How did you come up with the name Mr Hubbard?
I’ve named it Mr. Hubbard based on the old nursery rhyme ‘Old Mother Hubbard’. “Old mother Hubbard went to the cupboard”. My cupboard is my pantry – my fridge. So, people are coming in to Mr. Hubbard to get stuff from my cupboard. And no, my name is not Adam Hubbard, I get that asked everyday!
What sets Mr Hubbard apart from other Melbourne Cafes?
Everything in the fridge (at the front of the café) pretty much changes every week. So my brekky menu stays the same but my lunch menu constantly changes.
How do you design your menu?
What we serve is based upon the best produce at that point in time. So that’s what dictates what I serve. And that’s really my point of difference. I’ve got a forever-changing seasonal menu.
Also there’s no sugar is this café – it doesn’t exist. My sweeteners are either maple syrup, honey or rice malt syrup. It’s as fresh as you can make it.
What has made you so passionate about healthy eating?
I grew up in that environment through mum, she’s not a nutritionist but the two of us we are very holistic in our approach to medicine and food.
What’s your favourite meal on the menu?
Acai bowl. I like traditional. I’m a traditional person.. Go acai bowl and summer breeze smoothie – mango passion fruit
